Quality Louisiana Beef


Pre-Order Beef

Select the amount of beef you’d like to order.  We take a $250 per quarter deposit.  Online payments do include a 3.5% service charge.  For free options contact us directly.  Once your deposit is paid, we will help you complete a custom cut sheet.


Our beef is locally processed by one of our preferred partners.  Once the animal is harvested, we will contact you to discuss the remaining balance which will be due 7 days after the slaughter date.  At this time, you will receive the processor information.


Quarter beef will be cut and packaged in a Cross Bar C standard cut. Half and whole beef will be customized to your specifications provided by the cutsheet.  All beef will be USDA inspected, 21 day dry age, vacuum sealed and frozen upon pick up.  Please note we do not deliver.

Beef Information:

Beef is sold based on the hang weight.  Hang weight is what’s left after the initial harvest process.  On average our animals hang between 700 – 800lbs.  Sometimes it’s more, sometimes it’s less.  This is an estimate.


Price Breakdown:

$4.50 per pound for the animal

$1.34 per pound for processing

$75 Harvesting Fee

Half Beef Yield

This is an example of how much beef a half hanging 600lbs will yield.  Every animal is different and every customer usually chooses different cuts.  This is just to give you an idea:


  • 2 Boneless Brisket – (one cut in half)

  • 4 packs short ribs (about 2lb each)

  • 6 chuck roast (3-4lbs)

  • 10 boneless Ribeyes (cut 1.25”)

  • 4 packs skirt steak about 1lb each

  • 1 Flank steak

  • 12 lbs of boneless stew meat

  • 4 packs of soup bones  (about one pound each)

  • 2 Sirloin Tip roast – 3-4lb each

  • 6 Round Steaks bone-in

  • 12 T-bones

  • 5 Sirloin Steaks

  • 15# Marrow Bones for broth

  • 6lbs of liver

  • 60 – 75lb # Ground Beef
